Hummus Recipe
One recipe makes approximately 1 liter1 quart of hummus.
Combine:
- 1 clove of garlic (or 2 if you want a bite)
- 530 grams3 cups drained chickpeas, liquid reserved
- 60 grams¼ cup lemon juice
- 60 grams¼ cup reserved chickpea liquid or water
- 70 grams¼ cup tahini
- 110 grams½ cup olive oil
- ½ tsp (2 grams)½ tsp table salt
in a food processor. Process for 5 minutes, scraping down sides if necessary. Thin out with more chickpea liquid as desired.
Garnish with any or none of chopped parsley, paprika or sumac.
